Fermented vinegar is created through a two-step fermentation process. First, yeast converts sugars from fruits, grains, or other carbohydrate sources into alcohol, a process called alcoholic fermentation. Then, acetic acid bacteria oxidize the alcohol into acetic acid, giving vinegar its characteristic sour taste and preservative properties.
